Inside the Flavor Lab: How a DPM Flavor Is Born

What do you get when you mix a brainstorm, a spice rack, a chaotic lunch shift, and one wild idea involving stroop and sambal?
A brand-new DPM flavor.

Welcome to the Flavor Lab – the place where our next pancake stars are born. It’s loud. It’s messy. And it’s where magic happens.

Season’s calling and we answer in toppings

It usually starts with a nudge from the boss or one of the chefs: “Shouldn’t we start thinking about winter?”
Next thing you know, the flavor gates burst open.

Everyone joins in – marketing, the servers, the dishwasher, even that one regular guest who swears by brie and cranberries.
Ideas come from everywhere: your cravings, grandma’s cooking, what’s trending on TikTok, or that strange-but-genius combo you tried at 2am last Saturday.

This time? We’re heading into the colder months. That means cinnamon, roasted things, creamy sauces, heartier bites… and maybe something cheeky for Sinterklaas. Or sparkly for Christmas.

Welcome to the testlab

Once we’ve gathered enough wildcards, the kitchen takes over.

Our chefs roll up their sleeves and start testing. They look at structure, flavor layering, heat, prep time, plating, cost – and of course: does it slap?

The testing phase is pure chaos. Pancakes fly, sauces drip, spices clash and kiss, and someone always tries to sneak chocolate into something savoury.

Every now and then, a new pancake is passed through the window – and anyone nearby becomes an instant critic.
The boss. The kitchen crew. That delivery guy dropping of strawberries. No one is safe from the question:
“Quick. Try this. Yes or no?”

The crowd decides

Not every combo makes the cut. Some are just too wild. Others are brilliant, but too complex for the heat of service.

The final winners?
They’re the ones that:

  • Make people say “Wow” on the first bite.
  • Fit the rhythm of our kitchen.
  • Keep the team excited and the guests coming back.
  • That look that says; “Yummmm”

Those lucky pancakes earn a temporary spot on the menu – and who knows, maybe even a permanent place in our hearts (and yours).

Got an idea? We’re listening.

We’re cooking up something for the new season. And you’re officially invited to be part of it.

Have a flavor dream? A secret craving? A wild combo that deserves a chance?
Tell us. Slide into our messages. Whisper it to your waiter.
You might just find your pancake fantasy on a plate next month.

New season. New cravings. New flavors in the making.
We’ll keep flipping – you just keep dreaming.

Pancake Day Is Coming; And We’re Flipping Out

In the UK, it’s all about lemon and sugar. In the US, it’s an excuse to eat pancakes for dinner. But this year, Pancake Day is landing in Amsterdam, and we’re going full Dutch Pancake Masters. No races. No polite drizzle of lemon. We’re talking crispy bacon, syrup that drips down your wrist, and a […]

We Put a Full English on a Pancake. You’re Welcome (Or Sorry).

Some pancake toppings are universally loved. Apple and cinnamon? Comfort on a plate. Bacon and syrup? A Dutch staple with international flair. But every now and then, a topping shows up that splits the room, raises eyebrows and somehow still ends up as a fan favourite. We’re talking about the one. The bold. The controversial. […]

Old-School Pancake Toppings Dutchies Still Use (And So Do We)

Here in the Netherlands, we Dutchies know a thing or two about pancakes. We’re talking about the traditional Dutch kind, flat, golden, warm-from-the-pan and topped to your heart’s desire. Ask any Dutchie how pancake night went at home, and the answers are oddly similar. Someone, usually mum, dad, or oma, stood by the stove, flipping […]

We Let a Woman Named Mrs Sweettooth Hijack Our Kitchen (And We’re Still Recovering)

At Dutch Pancake Masters, we like to think we know our pancakes. We’ve flipped thousands, tested every topping, and survived the pineapple-on-a-pancake debate without a single casualty. So when someone called Mrs Sweettooth showed up unannounced, powdered, prim, and pointing to a painting.  we were… sceptical. She said she came from inside the painting. She […]
